Jerk BBQ Glazed Cod
Give your fish dishes a Caribbean twist with this fiery jerk bbq glaze. Brush on a fresh cod fillet the results are amazing. Served with rice and kidney beans makes this one tasty yet very simple dish you’ll just love..




Cod Fillets BR9001 
Jerk BBQ Glaze 
Basmati Rice 
Coconut Milk 
Spring Onions
Kidney Beans 
Maldon Sea Salt




Coat the cod with the jerk BBQ glaze, place in the fridge and marinade for 10 minutes. 


Put the washed & drained rice into a large saucepan with the spring onions, garlic & thyme sprigs. Season with salt, add the coconut milk, stir well and set over a high heat. 


Once the rice begins to boil turn it down to a medium heat, stir well, cover & allow to cook for 10 minutes, stirring frequently to stop the rice from sticking. 


Add the beans to the rice, then cover with a lid and heat for 5 minutes. Add a little water if the rice becomes too thick. 


Place the marinated cod onto a lightly oiled baking tray. Place in the oven at 180ºc and cook for approximately 5-10 minutes, depending on the thickness of the cod. 


To serve spoon some of the rice onto a serving dish & top with the cod.
