Hot Cross Bun Bread & Butter Pudding

Serves 10 

Strathroy Semi Skimmed Milk 459285 (500ml)
Fresh Cream G5006 (500ml)
Gem Caster Sugar G212 (200g)
Medium Free Range Eggs G11340 (5 whole plus 5 yolks) 
Brakes Golden Syrup 26941 (10 tsp) 


Make a custard filling by bringing the milk and cream to the boil, whisk together the sugar and eggs, then whisk in the boiled cream and milk mixture. 

Arrange the hot cross buns into individual ovenproof ramekins, Divide the custard between the dishes and leave to stand for half an hour. 

Drizzle over a teaspoon of golden syrup, then but into a bain-marie and cook for approximately 20 minutes at 180 degrees C until the custard is set. Simply serve warm with pouring cream.
